Vineyards: 95% Woodward Canyon, 4% Weinbau, 1% Bacchus
Winemaker Notes: Grapes were hand sorted and then destemmed to 1.5 and 3 ton open top fermenters. Grapes underwent a 48-hour soak followed by inoculation with Prise de Mousse or WC native yeast. Hand punchdowns or pumpovers are done twice a day. After 6 - 8 days on the grape skins, the wine was drained and pressed into 59-gallon barrels to finish yeast fermentation followed by a slow spontaneous malolactic fermentation.
Vintages: 2021, 2022 Varietal Composition: 47% Cabernet Franc, 20% Merlot, 15% Cabernet Sauvignon, 6% Mourvedre, 5% Grenache, 4% Barbera, 1% Dolcetto, 1% Syrah, 1% Chardonnay
